Instructions
- Creamy Tomato Pasta:
- 1. Cook pasta according to package directions.
- 2. While pasta cooks, heat olive oil in a skillet over medium heat. Add garlic and cook until fragrant.
- 3. Stir in crushed tomatoes, heavy cream, Parmesan cheese, salt, and pepper. Bring to a simmer.
- 4. Combine cooked pasta and sauce, toss to coat, and serve immediately, garnished with fresh basil.
- Lemon Garlic Shrimp Pasta:
- 1. Cook pasta according to package directions.
- 2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant.
- 3. Add shrimp and cook until pink and cooked through.
- 4. Stir in lemon juice, parsley, red pepper flakes, salt, and pepper.
- 5. Combine cooked pasta and shrimp mixture, toss to coat, and serve immediately.
- Pan Seared Salmon with Roasted Asparagus:
- 1. Preheat oven to 400°F (200°C).
- 2. Toss asparagus with 1 tablespoon olive oil, salt and pepper. Spread on a baking sheet.
- 3. Pat salmon fillets dry and season with 1 tablespoon olive oil, salt and pepper.
- 4. Place salmon on the same baking sheet as asparagus, skin-side up. Drape lemon slices on top.
- 5. Roast for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
- Chicken Piccata:
- 1. Place chicken between plastic wrap and pound to 1/4 inch thickness
- 2. In a shallow dish, mix flour, salt and pepper
- 3. Dredge the chicken thoroughly in mixture.
- 4. Set aside.
- 5. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- 6. Add the chicken broth and lemon juice to the skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- 7. Stir in the capers and butter. Simmer until the sauce has slightly thickened.
- 8. Return the chicken to the skillet, coating it with sauce. Garnish with fresh parsley.
- Steak Fajitas:
- 1. In a bowl, marinate the flank steak with the fajita seasoning. Let it rest for 20-30 minutes.
- 2. In a hot pan add olive oil. Add onion and bell pepper. Saute until tender.
- 3. Remove veggies and set aside
- 4. Cook the steak on the pan and saute until cooked completely.
- 5. Shred the steak and mix steak with vegetables.
- 6. Serve in tortillas.
- Chocolate Lava Cakes:
- 1. Preheat oven to 425°F (220°C). Grease and flour two ramekins.
- 2. Melt chocolate and butter together in a heatproof bowl set over a simmering pot of water (or in the microwave in 30-second intervals). Stir until smooth.
- 3. Remove from heat and let cool slightly.
- 4. Whisk in sugar, then whisk in eggs and egg yolks until well combined.
- 5. Gently fold in flour and salt until just combined; do not overmix.
- 6. Pour batter into prepared ramekins.
- 7. Bake for 12-15 minutes, or until edges are set but center is still soft.
- 8. Let cool for a minute, then invert onto plates. Dust with powdered sugar and serve immediately.
- Strawberry Shortcakes:
- 1. Bake or prepare biscuits according to instructions
- 2. Macerate slices strawberries and let rest for 30 minutes
- 3. Whip cream with sugar and vanilla extract
- 4. Assemble cake with biscuit, strawberries and whipped cream.
