Description
A creamy, flavorful, and easy one pot pasta dish with tomatoes, basil, and parmesan cheese. Perfect for a quick weeknight dinner.
Ingredients
Scale
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 4 cups vegetable broth
- 1 pound pasta (penne, rotini, or your favorite shape)
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Pour in the crushed tomatoes, tomato sauce, and vegetable broth. Stir to combine.
- Add the pasta, dried basil, salt, and pepper. Stir well to ensure the pasta is submerged in the liquid.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 to 20 minutes, or until the pasta is cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
- Stir in the heavy cream and Parmesan cheese until well combined. Cook for another minute until the sauce is creamy and smooth.
- Garnish with fresh basil leaves and serve immediately.
