- 2 tablespoons butter
- 1 medium onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1/2 cup all purpose flour
- 4 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 cup frozen peas
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste

- 1 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cubed
- 1/4 cup ice water
Instructions
- 1. Prepare the filling: In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery; cook until softened, about 5 7 minutes.
- 2. Add flour and broth: Stir in the flour until smooth. Gradually whisk in the chicken broth until there are no lumps. Bring to a simmer, stirring constantly.
- 3. Simmer and add chicken: Reduce heat and simmer for 10 15 minutes, or until the sauce has thickened slightly. Stir in the cooked chicken, peas, heavy cream, and thyme. Season with salt and pepper to taste.
- 4. Prepare the crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- 5. Add water: Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- 6. Assemble the pot pie: Preheat your oven to 400°F (200°C). Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness. Cut a circle slightly larger than your pot or pie dish.
- 7. Fill and bake: Pour the chicken filling into the pot or pie dish. Place the dough circle on top, crimping the edges to seal. Cut a few slits in the top of the crust to allow steam to escape.
- 8. Bake: Bake for 25 30 minutes, or until the crust is golden brown and the filling is bubbly. Let cool for a few minutes before serving.
