Creamy, dreamy, green goddess pasta ready in minutes. This healthy avocado pesto pasta is a quick and easy weeknight dinner bursting with fresh flavor.


Ingredients

Scale
  • 1 pound pasta (spaghetti, linguine, or your favorite shape)
  • 2 ripe avocados
  • 1/4 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Optional: Red pepper flakes for a little kick
  • Optional: Cherry tomatoes, halved for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. While the pasta is cooking, prepare the avocado pesto. In a food processor or blender, combine the avocados, basil, garlic, Parmesan cheese, olive oil, and lemon juice.
  3. Blend until smooth and creamy. Season with salt and pepper to taste. Add red pepper flakes if desired.
  4. Once the pasta is drained, return it to the pot. Add the avocado pesto to the pasta and toss to coat well.
  5. If the pesto is too thick, add some of the reserved pasta water, one tablespoon at a time, until the sauce reaches your desired consistency.
  6. Serve immediately, garnished with extra Parmesan cheese and halved cherry tomatoes, if using. Enjoy!
