Description
A rich and hearty beef stew inspired by Anthony Bourdain, featuring tender beef chuck, vegetables, and a flavorful red wine broth. A classic comfort food recipe.

- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 oz mushrooms, quartered
- 3 tbsp all purpose flour
- 1 bottle (750ml) dry red wine (Burgundy or Cabernet Sauvignon)
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 lb Yukon Gold potatoes, peeled and cubed
- 1 cup frozen peas (optional)
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Season the beef chuck cubes generously with salt and pepper.
- In a large Dutch oven or heavy pot, heat the olive oil over medium high heat. Brown the beef in batches, ensuring not to overcrowd the pot. Remove the beef and set aside.
- Add the chopped onion, carrots, and celery to the pot. Cook until softened, about 5 7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the quartered mushrooms and cook until they release their moisture and begin to brown.
- Sprinkle the all purpose flour over the vegetables and cook for 1 2 minutes, stirring constantly to create a roux.
- Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer and cook for 5 minutes to reduce slightly.
- Add the beef broth, tomato paste, Worcestershire sauce, bay leaves, thyme, and rosemary. Stir well to combine.
- Return the browned beef to the pot. Bring to a simmer, then reduce the heat to low, cover, and simmer for at least 2 3 hours, or until the beef is very tender.
- Add the cubed potatoes to the stew and continue to simmer for another 30 minutes, or until the potatoes are tender.
- If desired, stir in the frozen peas during the last 5 minutes of cooking.
- Remove the bay leaves before serving. Taste and adjust seasoning with salt and pepper as needed.
- Garnish with fresh chopped parsley before serving.
