- 1 cup (2 sticks) salted butter, softened
- ¾ cup granulated sugar
- ¾ cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup Bailey’s Irish Cream
- 2 ¼ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups powdered sugar
- ¼ cup Bailey’s Irish Cream
- Optional: Green sprinkles for decoration
Instructions
- 1. Cream together the butter and sugars until light and fluffy.
- 2. Beat in the eggs one at a time, then stir in the vanilla extract and Bailey’s Irish Cream.
- 3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- 4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- 5. Cover the dough and chill it in the refrigerator for at least 30 minutes.
- 6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 7. Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
- 8. Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft.
- 9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- 10. Whisk together the powdered sugar and Bailey’s Irish Cream until smooth.
- 11. Drizzle the glaze over the cookies and sprinkle with green sprinkles if desired.
