  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sriracha (adjust to your spice preference)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon black pepper
  • Sesame seeds (optional, for garnish)
  • Chopped green onions (optional, for garnish)

Instructions

  1. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, rice vinegar, soy sauce, honey, sriracha, garlic powder, ginger, and pepper until well combined.
  2. Add the chicken cubes to the bowl and toss to coat evenly in the marinade.
  3. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  4. While the chicken is marinating, soak wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
  5. Preheat your grill to medium heat or your oven to 400°F (200°C).
  6. Thread the marinated chicken cubes onto the skewers, leaving a small space between each piece to ensure even cooking.
  7. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through. Or, bake in the preheated oven for 15-20 minutes, flipping halfway through.
  8. During the last few minutes of cooking, brush the skewers with extra bang bang sauce.
  9. Remove the skewers from the grill or oven and let them rest for a few minutes before serving.
