Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breasts, cut into 1 inch cubes
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tablespoons sriracha (or more, to taste)
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1/2 teaspoon garlic powder
- Sesame seeds, for garnish (optional)
- Chopped green onions, for garnish (optional)
Instructions
- 1. Marinate the Chicken: In a medium bowl, combine the chicken cubes with soy sauce, garlic powder, ginger, and black pepper. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
- 2. Prepare the Sauce: While the chicken is marinating, prepare the bang bang sauce. In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, honey, and garlic powder until smooth. Taste and adjust the sriracha amount to your preferred level of spiciness.
- 3. Assemble the Skewers: Thread the marinated chicken cubes onto skewers. Aim for about 4-5 pieces of chicken per skewer, depending on their size.
- 4. Grill the Skewers: Preheat your grill to medium heat (about 375°F or 190°C). Place the chicken skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and lightly charred. The internal temperature should reach 165°F (74°C).
- 5. Coat with Sauce: Remove the chicken skewers from the grill and immediately brush generously with the prepared bang bang sauce, ensuring that each skewer is well coated.
- 6. Garnish and Serve: Sprinkle sesame seeds and chopped green onions over the sauced chicken skewers for garnish, if desired. Serve immediately and enjoy!
