Ingredients

  • 2 cups cooked BBQ chicken, shredded
  • 1/4 cup BBQ sauce (your favorite brand)
  • 4 slices of your favorite bread (I love sourdough or Texas toast)
  • 3 tablespoons butter, softened
  • 4 slices cheddar cheese
  • 2 slices provolone cheese

Instructions

  1. In a medium bowl, combine the shredded BBQ chicken with the BBQ sauce. Mix well to ensure the chicken is evenly coated.
  2. Spread softened butter on one side of each slice of bread.
  3. Place two slices of bread, butter side down, into a cold skillet or griddle.
  4. Top each slice with one slice of cheddar cheese.
  5. Evenly distribute the BBQ chicken mixture over slices of cheese.
  6. Place one slice of provolone cheese on top of the BBQ chicken on each sandwich.
  7. Top with the remaining slices of cheddar cheese and the remaining slices of bread, butter side up.
  8. Cook over medium low heat for 3 to 4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  9. Carefully remove the BBQ chicken grilled cheese sandwich from the skillet, slice it diagonally, and serve immediately.
