- 2 cups cooked BBQ chicken, shredded
- 1/4 cup BBQ sauce (your favorite brand)
- 4 slices of your favorite bread (I love sourdough or Texas toast)
- 3 tablespoons butter, softened
- 4 slices cheddar cheese
- 2 slices provolone cheese
Instructions
- In a medium bowl, combine the shredded BBQ chicken with the BBQ sauce. Mix well to ensure the chicken is evenly coated.
- Spread softened butter on one side of each slice of bread.
- Place two slices of bread, butter side down, into a cold skillet or griddle.
- Top each slice with one slice of cheddar cheese.
- Evenly distribute the BBQ chicken mixture over slices of cheese.
- Place one slice of provolone cheese on top of the BBQ chicken on each sandwich.
- Top with the remaining slices of cheddar cheese and the remaining slices of bread, butter side up.
- Cook over medium low heat for 3 to 4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
- Carefully remove the BBQ chicken grilled cheese sandwich from the skillet, slice it diagonally, and serve immediately.
