- 1 (16 ounce) can of refrigerated biscuit dough (flaky or buttermilk)
- 1 pound breakfast sausage (I prefer mild or spicy)
- 1/4 cup all purpose flour
- 3 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- Optional: Chopped green onions, for garnish
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large skillet, cook the breakfast sausage over medium heat until browned. Crumble the sausage as it cooks. Drain any excess grease.
- Sprinkle the flour over the cooked sausage in the skillet. Stir well to coat. Cook for 1 minute, stirring constantly, to create a roux.
- Gradually whisk in the milk, making sure to break up any lumps. Bring the mixture to a simmer, stirring constantly until the gravy thickens. This usually takes about 5-7 minutes.
- Season the gravy with salt and pepper to taste. Remove from heat.
- In a separate bowl, whisk together the eggs and milk.
- Cut each biscuit into quarters.
- Arrange the biscuit pieces in the greased baking dish.
- Pour the egg mixture over the biscuits, making sure they are evenly coated.
- Pour the sausage gravy over the biscuit and egg mixture.
- Sprinkle the shredded cheddar cheese over the top.
- Bake in the preheated oven for 25 30 minutes or until the biscuits are golden brown and the casserole is set.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped green onions, if desired.
