Ingredients

  • 4 cups fresh rhubarb, chopped
  • 1/2 cup granulated sugar
  • 2 tablespoons all purpose flour
  • 1/4 cup raspberry jam
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup all purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine rhubarb, sugar, flour, jam, vanilla, and lemon juice.
  3. Pour into an 8×8 inch baking dish.
  4. In a separate bowl, combine flour, brown sugar, cinnamon, and salt.
  5. Cut in cold butter until mixture resembles coarse crumbs.
  6. Sprinkle topping over rhubarb mixture.
  7. Bake for 35-40 minutes, or until golden brown and bubbly.
  8. Let cool slightly before serving.
