- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional, for extra spice)
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 1/2 cups long grain rice, rinsed
- 3 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- 1. In a large skillet, heat olive oil over medium heat.
- 2. In a bowl, toss the shrimp with Cajun seasoning, garlic powder, and cayenne pepper (if using).
- 3. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
- 4. Add the chopped onion and green bell pepper to the skillet and cook until softened, about 5 minutes.
- 5. Add the minced garlic and cook for another minute, until fragrant.
- 6. Stir in the rinsed rice, chicken broth, diced tomatoes (with their juice), dried thyme, salt, and pepper. Bring the mixture to a boil.
- 7. Reduce the heat to low, cover the skillet, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
- 8. Gently stir in the cooked shrimp into the rice. Cook for another 2-3 minutes to heat the shrimp through.
- 9. Garnish with fresh parsley before serving.
