  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for extra spice)
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups long grain rice, rinsed
  • 3 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. 1. In a large skillet, heat olive oil over medium heat.
  2. 2. In a bowl, toss the shrimp with Cajun seasoning, garlic powder, and cayenne pepper (if using).
  3. 3. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. 4. Add the chopped onion and green bell pepper to the skillet and cook until softened, about 5 minutes.
  5. 5. Add the minced garlic and cook for another minute, until fragrant.
  6. 6. Stir in the rinsed rice, chicken broth, diced tomatoes (with their juice), dried thyme, salt, and pepper. Bring the mixture to a boil.
  7. 7. Reduce the heat to low, cover the skillet, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. 8. Gently stir in the cooked shrimp into the rice. Cook for another 2-3 minutes to heat the shrimp through.
  9. 9. Garnish with fresh parsley before serving.
