Ingredients

  • BBQ Pulled Pork:
  • 3 pound pork shoulder
  • 1 bottle (18 oz) BBQ sauce
  • 1 can (12 oz) cola
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • Salsa Chicken:
  • 2 pounds boneless, skinless chicken breasts
  • 1 jar (16 oz) salsa
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • Creamy Tomato Soup:
  • 1 large can (28 oz) crushed tomatoes
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon honey or Maple Syrup
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chicken and Potatoes:
  • 2 pounds boneless, skinless chicken thighs
  • 2 pounds potatoes, peeled and cubed
  • 1 packet ranch dressing mix
  • 1 can (10.75 oz) cream of chicken soup
  • 1/2 cup water

Instructions

  1. BBQ Pulled Pork:
  2. 1. Place the pork shoulder in the crockpot.
  3. 2. Pour the BBQ sauce and cola over the pork.
  4. 3. Add the Worcestershire sauce and smoked paprika.
  5. 4. Cover and cook on low for 8-10 hours, or on high for 4-6 hours, until the pork is easily shredded with a fork.
  6. 5. Shred the pork directly in the crockpot, mixing it with the sauce.
  7. 6. Serve on buns, over rice, or however you like!
  8. Salsa Chicken:
  9. 1. Place the chicken breasts in the crockpot.
  10. 2. Pour the salsa over the chicken.
  11. 3. Sprinkle the taco seasoning, black beans, and corn over the top.
  12. 4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is easily shredded with a fork.
  13. 5. Shred the chicken directly in the crockpot, mixing it with the salsa, beans, and corn.
  14. Creamy Tomato Soup:
  15. 1. Pour the crushed tomatoes and coconut milk into the crockpot.
  16. 2. Add the garlic powder, honey and Salt and pepper.
  17. 3. Stir everything together well.
  18. 4. Cover and cook on low for 4-6 hours, or on high for 2-3 hours.
  19. 5. Use an immersion blender to blend the soup until smooth (or carefully blend in batches in a regular blender).
  20. Chicken and Potatoes:
  21. 1. Place the potatoes in the bottom of the crockpot.
  22. 2. Top with the chicken thighs.
  23. 3. In a bowl, whisk together the ranch dressing mix, cream of chicken soup, and water.
  24. 4. Pour the mixture over the chicken and potatoes.
  25. 5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
