Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 3/4 cups buttermilk
  • 1 large egg, lightly beaten
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking sheet or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. Add the shredded cheddar cheese, chopped chives, parsley, and thyme to the dry ingredients. Toss to combine.
  4. In a separate bowl, whisk together the buttermilk, egg, and melted butter.
  5. Pour the wet ingredients into the dry ingredients. Mix until *just* combined.
  6. Turn the dough out onto a lightly floured surface. Gently shape the dough into a round loaf about 2 inches thick.
  7. Place the loaf on the prepared baking sheet. Use a sharp knife to cut a deep cross (about 1 inch deep) into the top of the loaf.
  8. Bake for 35-40 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  9. Let the bread cool on a wire rack for 10-15 minutes before slicing and serving.
