A warm, comforting loaf of cheddar and herb studded soda bread.
Ingredients

- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups sharp cheddar cheese, shredded
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 3/4 cups buttermilk
- 1 large egg, lightly beaten
- 4 tablespoons unsalted butter, melted
Instructions
- Preheat oven to 400°F (200°C). Grease a baking sheet or line it with parchment paper.
- In a large bowl, whisk together the flour, baking soda, and salt.
- Add the shredded cheddar cheese, chopped chives, parsley, and thyme to the dry ingredients. Toss to combine.
- In a separate bowl, whisk together the buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients. Mix until *just* combined.
- Turn the dough out onto a lightly floured surface. Gently shape the dough into a round loaf about 2 inches thick.
- Place the loaf on the prepared baking sheet. Use a sharp knife to cut a deep cross (about 1 inch deep) into the top of the loaf.
- Bake for 35-40 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
- Let the bread cool on a wire rack for 10-15 minutes before slicing and serving.
