Delightful strawberry cheesecake bites made with fresh strawberries and a creamy no bake cheesecake filling, perfect for parties and summer treats.

- 1 pound large, fresh strawberries
- 8 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk or heavy cream
- Mini chocolate chips (optional)
- Crushed graham crackers (optional)
- Sprinkles (optional)
- Strawberry slices (optional)
Instructions
- Gently wash and dry the strawberries. Cut off the stem end and carefully hollow out the center.
- In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Add the powdered sugar and vanilla extract, and continue to beat until well combined. Gradually add the milk or heavy cream until smooth.
- Transfer the cheesecake filling to a piping bag fitted with a small star tip or use a ziplock bag with a corner snipped off. Pipe the filling into the hollowed out strawberries.
- While the filling is still soft, dip the filled strawberries in mini chocolate chips, crushed graham crackers, or sprinkles. You can also garnish with a small slice of strawberry.
- Place the filled strawberries on a plate or tray lined with parchment paper and refrigerate for at least 30 minutes to allow the filling to firm up. Serve chilled and enjoy!
