- 1 pound elbow macaronin1 cup mayonnaisen2 tablespoons white vinegarn1 tablespoon yellow mustardn2 tablespoons sugarn1/2 cup finely chopped celeryn1/4 cup finely chopped red onionn1/4 cup finely chopped green bell peppern3 hard boiled eggs, choppedn2 tablespoons sweet pickle relishn1 teaspoon saltn1/2 teaspoon black peppern1/4 teaspoon paprika, for garnish (optional)
Instructions
- Cook macaroni according to package directions until al dente. Drain and rinse with cold water.nIn a large bowl, whisk together mayonnaise, vinegar, mustard, and sugar.nAdd cooked macaroni, celery, red onion, green bell pepper, eggs, and relish to the bowl with the dressing.nGently stir until well coated.nSeason with salt and pepper to taste.nCover and refrigerate for at least 2 hours before serving. Garnish with paprika, if desired.
