This cozy cheddar and herb soda bread is a quick and easy bread recipe that requires no yeast! It’s packed with flavor and perfect for pairing with soups, stews, or enjoying on its own.

- 4 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 1 3/4 cups buttermilk (or 1 3/4 cups milk with 2 tablespoons lemon juice)
- 1/4 cup melted unsalted butter, cooled slightly
- 2 cups shredded sharp cheddar cheese
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh parsley
- 1 tablespoon chopped fresh rosemary
- 1/2 teaspoon garlic powder
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
- In a large bowl, whisk together the flour, baking soda, salt, and sugar.
- In a separate bowl, combine the buttermilk and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix! The dough should be slightly sticky.
- Gently fold in the shredded cheddar cheese, chopped chives, chopped parsley, chopped rosemary, and garlic powder.
- Turn the dough out onto a lightly floured surface and shape it into a round loaf, about 2 inches thick.
- Place the loaf on the prepared baking sheet. Use a sharp knife to cut a deep cross into the top of the loaf, about 1 inch deep. This helps it bake evenly.
- Bake for 40 to 45 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
- Let the loaf cool on a wire rack for at least 15 minutes before slicing and serving.
