Description

This cozy cheddar and herb soda bread is a quick and easy bread recipe that requires no yeast! It’s packed with flavor and perfect for pairing with soups, stews, or enjoying on its own.


Ingredients

  • 4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 3/4 cups buttermilk (or 1 3/4 cups milk with 2 tablespoons lemon juice)
  • 1/4 cup melted unsalted butter, cooled slightly
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh rosemary
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
  2. In a large bowl, whisk together the flour, baking soda, salt, and sugar.
  3. In a separate bowl, combine the buttermilk and melted butter.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix! The dough should be slightly sticky.
  5. Gently fold in the shredded cheddar cheese, chopped chives, chopped parsley, chopped rosemary, and garlic powder.
  6. Turn the dough out onto a lightly floured surface and shape it into a round loaf, about 2 inches thick.
  7. Place the loaf on the prepared baking sheet. Use a sharp knife to cut a deep cross into the top of the loaf, about 1 inch deep. This helps it bake evenly.
  8. Bake for 40 to 45 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
  9. Let the loaf cool on a wire rack for at least 15 minutes before slicing and serving.
