Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 cup beef broth
  • 1/2 cup dry red wine (optional, can substitute with more beef broth)
  • 2 tablespoons tomato paste
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for a little heat)
  • 1 bay leaf
  • Salt and pepper to taste
  • Cooked pasta of your choice
  • Fresh parsley, chopped
  • Grated Parmesan cheese

Instructions

  1. In a skillet, sear the beef cubes until browned.
  2. Transfer the beef to your slow cooker.
  3. Sauté onion and garlic in the same skillet.
  4. Add crushed tomatoes, tomato sauce, beef broth, red wine (if using), tomato paste, oregano, basil, and red pepper flakes to the skillet. Simmer.
  5. Pour the sauce over the beef in the slow cooker.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Shred the beef with two forks (optional).
  8. Discard the bay leaf. Serve over pasta, garnish with parsley and Parmesan.
