A comforting and easy slow cooker beef recipe perfect for a cozy night in. Tender beef in a rich tomato sauce, served over your favorite pasta.

- 2 pounds beef chuck roast, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 cup beef broth
- 1/2 cup dry red wine (optional, can substitute with more beef broth)
- 2 tablespoons tomato paste
- 1 tablespoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional, for a little heat)
- 1 bay leaf
- Salt and pepper to taste
- Cooked pasta of your choice
- Fresh parsley, chopped
- Grated Parmesan cheese
Instructions
- In a skillet, sear the beef cubes until browned.
- Transfer the beef to your slow cooker.
- Sauté onion and garlic in the same skillet.
- Add crushed tomatoes, tomato sauce, beef broth, red wine (if using), tomato paste, oregano, basil, and red pepper flakes to the skillet. Simmer.
- Pour the sauce over the beef in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the beef with two forks (optional).
- Discard the bay leaf. Serve over pasta, garnish with parsley and Parmesan.
