  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped sun dried tomatoes, oil packed, drained
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound fettuccine or linguine pasta
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. In a bowl, toss the shrimp with olive oil, salt, pepper, and garlic powder.
  3. Heat a large skillet over medium high heat. Add the shrimp and cook for 2 3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant, being careful not to burn it.
  5. Pour in the white wine and let it simmer for 2 3 minutes, allowing the alcohol to evaporate.
  6. Stir in the heavy cream, Parmesan cheese, sun dried tomatoes, red pepper flakes (if using), salt, and pepper. Bring to a simmer and cook for 3 4 minutes, until the sauce has thickened slightly.
  7. Add the cooked shrimp to the sauce and stir to combine.
  8. Add the drained pasta to the skillet with the sauce and shrimp. Toss well to coat. If the sauce is too thick, add a little of the reserved pasta water to reach the desired consistency.
  9. Serve immediately, garnished with fresh chopped parsley.
