- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped sun dried tomatoes, oil packed, drained
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound fettuccine or linguine pasta
- Fresh parsley, chopped, for garnish
Instructions
- Cook the pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
- In a bowl, toss the shrimp with olive oil, salt, pepper, and garlic powder.
- Heat a large skillet over medium high heat. Add the shrimp and cook for 2 3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant, being careful not to burn it.
- Pour in the white wine and let it simmer for 2 3 minutes, allowing the alcohol to evaporate.
- Stir in the heavy cream, Parmesan cheese, sun dried tomatoes, red pepper flakes (if using), salt, and pepper. Bring to a simmer and cook for 3 4 minutes, until the sauce has thickened slightly.
- Add the cooked shrimp to the sauce and stir to combine.
- Add the drained pasta to the skillet with the sauce and shrimp. Toss well to coat. If the sauce is too thick, add a little of the reserved pasta water to reach the desired consistency.
- Serve immediately, garnished with fresh chopped parsley.
