- 1 pound pasta (rotini, penne, or farfalle)
- 1 cup mayonnaise
- ½ cup sour cream
- ¼ cup milk
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup diced celery
- 1 cup diced red onion
- 1 cup diced bell pepper (any color)
- 1 cup halved cherry tomatoes
- 1 cup cubed cheddar cheese
- ½ cup chopped fresh parsley
Instructions
- Cook the pasta according to package directions until al dente. Drain well and rinse with cold water.
- In a large bowl, whisk together the mayonnaise, sour cream, milk, apple cider vinegar, sugar, Dijon mustard, salt, and pepper.
- Add the cooled pasta, celery, red onion, bell pepper, cherry tomatoes, cheddar cheese, and parsley to the bowl with the dressing. Gently toss everything together until well coated.
- Cover the bowl and refrigerate for at least 1 hour before serving.
- Before serving, give the salad another gentle toss and add any extra fresh parsley for garnish, if desired.
