Ingredients

  • 1 pound pasta (rotini, penne, or farfalle)
  • 1 cup mayonnaise
  • ½ cup sour cream
  • ¼ cup milk
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup diced celery
  • 1 cup diced red onion
  • 1 cup diced bell pepper (any color)
  • 1 cup halved cherry tomatoes
  • 1 cup cubed cheddar cheese
  • ½ cup chopped fresh parsley

Instructions

  1. Cook the pasta according to package directions until al dente. Drain well and rinse with cold water.
  2. In a large bowl, whisk together the mayonnaise, sour cream, milk, apple cider vinegar, sugar, Dijon mustard, salt, and pepper.
  3. Add the cooled pasta, celery, red onion, bell pepper, cherry tomatoes, cheddar cheese, and parsley to the bowl with the dressing. Gently toss everything together until well coated.
  4. Cover the bowl and refrigerate for at least 1 hour before serving.
  5. Before serving, give the salad another gentle toss and add any extra fresh parsley for garnish, if desired.
