Description
A classic Creamy Pasta Salad made with rotini pasta, fresh vegetables, and a tangy, homemade dressing. Perfect for potlucks, picnics, or a light lunch!

- 1 pound pasta (rotini, penne, or your favorite shape)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, peeled, seeded, and diced
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper (any color), diced
- 1/4 cup black olives, sliced
- 1 cup mayonnaise
- 1/2 cup sour cream or Greek yogurt
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Cook the pasta according to package directions until al dente. Drain and rinse with cold water.
- Prepare the vegetables: Halve tomatoes, dice cucumber and bell pepper, chop red onion, and slice olives.
- In a large bowl, whisk together mayonnaise, sour cream, vinegar, sugar, mustard, garlic powder, salt, and pepper.
- Add the cooked pasta to the bowl with the dressing and toss to coat.
- Add the vegetables and toss gently.
- Cover and refrigerate for at least 30 minutes to let the flavors meld.
- Garnish with fresh parsley before serving, if desired.
