Description

A classic Creamy Pasta Salad made with rotini pasta, fresh vegetables, and a tangy, homemade dressing. Perfect for potlucks, picnics, or a light lunch!


Ingredients

  • 1 pound pasta (rotini, penne, or your favorite shape)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, peeled, seeded, and diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper (any color), diced
  • 1/4 cup black olives, sliced
  • 1 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water.
  2. Prepare the vegetables: Halve tomatoes, dice cucumber and bell pepper, chop red onion, and slice olives.
  3. In a large bowl, whisk together mayonnaise, sour cream, vinegar, sugar, mustard, garlic powder, salt, and pepper.
  4. Add the cooked pasta to the bowl with the dressing and toss to coat.
  5. Add the vegetables and toss gently.
  6. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  7. Garnish with fresh parsley before serving, if desired.
