Ingredients

  • 1 pound pasta (rotini, bow tie, or penne)
  • 1 cup broccoli florets, chopped
  • 1 cup carrots, shredded
  • 1/2 cup red onion, finely chopped
  • 1/2 cup celery, diced
  • 1/2 cup bell pepper (red, yellow, or orange), diced
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked ham, diced (optional)
  • 1/2 cup cheddar cheese, cubed (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse with cold water.
  2. Prepare the vegetables by chopping and dicing as indicated in the ingredients list.
  3. In a large bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
  4. Add the cooked pasta and chopped vegetables to the bowl with the dressing. Add the diced ham and cubed cheddar cheese, if using.
  5. Gently toss all ingredients together until well coated.
  6. Cover and refrigerate for at least 30 minutes before serving.
  7. Taste and adjust seasonings as needed. Garnish with fresh parsley, if desired.
