A classic creamy pasta salad with tender pasta, crisp vegetables, and a tangy dressing. Perfect for potlucks, barbecues, or a quick lunch.

- 1 pound pasta (rotini, bow tie, or penne)
- 1 cup broccoli florets, chopped
- 1 cup carrots, shredded
- 1/2 cup red onion, finely chopped
- 1/2 cup celery, diced
- 1/2 cup bell pepper (red, yellow, or orange), diced
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cooked ham, diced (optional)
- 1/2 cup cheddar cheese, cubed (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse with cold water.
- Prepare the vegetables by chopping and dicing as indicated in the ingredients list.
- In a large bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
- Add the cooked pasta and chopped vegetables to the bowl with the dressing. Add the diced ham and cubed cheddar cheese, if using.
- Gently toss all ingredients together until well coated.
- Cover and refrigerate for at least 30 minutes before serving.
- Taste and adjust seasonings as needed. Garnish with fresh parsley, if desired.
