Description
A creamy and flavorful pasta salad with taco seasoned ground beef, cheddar cheese, black olives, corn, and a delicious ranch dressing. Perfect for potlucks or quick weeknight meals.

- 1 pound pasta (rotini, penne, or your favorite shape)
- 1 pound ground beef
- 1 packet taco seasoning (1 ounce)
- 1 cup creamy ranch dressing
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup milk
- 1/2 cup chopped red onion
- 1 cup chopped tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup black olives, sliced
- 1/2 cup corn, canned or frozen
- 1/4 cup chopped fresh cilantro
Instructions
- Cook the pasta according to the package directions until al dente. Drain and rinse with cold water.
- In a large skillet, brown the ground beef over medium high heat. Drain any excess grease.
- Stir in the taco seasoning and 1/2 cup water. Simmer for 5 7 minutes, or until the water is absorbed.
- In a large bowl, whisk together the ranch dressing, sour cream, mayonnaise, and milk until smooth.
- Add the cooked pasta, seasoned ground beef, red onion, tomatoes, cheddar cheese, black olives, corn, and cilantro to the bowl with the dressing.
- Toss everything together until well combined.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
