Description

A creamy and flavorful pasta salad with taco seasoned ground beef, cheddar cheese, black olives, corn, and a delicious ranch dressing. Perfect for potlucks or quick weeknight meals.


Ingredients

  • 1 pound pasta (rotini, penne, or your favorite shape)
  • 1 pound ground beef
  • 1 packet taco seasoning (1 ounce)
  • 1 cup creamy ranch dressing
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 1/2 cup chopped red onion
  • 1 cup chopped tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup black olives, sliced
  • 1/2 cup corn, canned or frozen
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Cook the pasta according to the package directions until al dente. Drain and rinse with cold water.
  2. In a large skillet, brown the ground beef over medium high heat. Drain any excess grease.
  3. Stir in the taco seasoning and 1/2 cup water. Simmer for 5 7 minutes, or until the water is absorbed.
  4. In a large bowl, whisk together the ranch dressing, sour cream, mayonnaise, and milk until smooth.
  5. Add the cooked pasta, seasoned ground beef, red onion, tomatoes, cheddar cheese, black olives, corn, and cilantro to the bowl with the dressing.
  6. Toss everything together until well combined.
  7. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
