- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bottle (11.2 oz) Guinness stout
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 bay leaves
- 1 lb Yukon Gold potatoes, peeled and cubed
- 1 cup frozen peas
Instructions
- Season the beef cubes with salt, pepper, and smoked paprika.
- In a large skillet, heat olive oil over medium-high heat. Brown the beef in batches to avoid overcrowding, ensuring each piece is seared on all sides. Remove the beef from the skillet and set aside.
- Add the chopped onion, carrots, and celery to the skillet and cook until softened, about 5-7 minutes. Add the minced garlic, tomato paste, thyme, and rosemary, and cook for another minute until fragrant.
- Pour in the Guinness stout to deglaze the skillet, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes to reduce slightly.
- Transfer the beef, vegetables, and Guinness mixture to a slow cooker. Add the beef broth, Worcestershire sauce, and bay leaves. Stir to combine.
- Cover the slow cooker and cook on low for 7-8 hours or on high for 3-4 hours, or until the beef is very tender.
- Add the cubed potatoes to the slow cooker during the last 2-3 hours of cooking time.
- During the last 30 minutes of cook time add in the frozen peas and stir.
- Once finished, remove the bay leaves before serving.
- Serve hot, garnished with fresh parsley (optional) and crusty bread.
