Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bottle (11.2 oz) Guinness stout
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1 lb Yukon Gold potatoes, peeled and cubed
  • 1 cup frozen peas

Instructions

  1. Season the beef cubes with salt, pepper, and smoked paprika.
  2. In a large skillet, heat olive oil over medium-high heat. Brown the beef in batches to avoid overcrowding, ensuring each piece is seared on all sides. Remove the beef from the skillet and set aside.
  3. Add the chopped onion, carrots, and celery to the skillet and cook until softened, about 5-7 minutes. Add the minced garlic, tomato paste, thyme, and rosemary, and cook for another minute until fragrant.
  4. Pour in the Guinness stout to deglaze the skillet, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes to reduce slightly.
  5. Transfer the beef, vegetables, and Guinness mixture to a slow cooker. Add the beef broth, Worcestershire sauce, and bay leaves. Stir to combine.
  6. Cover the slow cooker and cook on low for 7-8 hours or on high for 3-4 hours, or until the beef is very tender.
  7. Add the cubed potatoes to the slow cooker during the last 2-3 hours of cooking time.
  8. During the last 30 minutes of cook time add in the frozen peas and stir.
  9. Once finished, remove the bay leaves before serving.
  10. Serve hot, garnished with fresh parsley (optional) and crusty bread.
