- 6 hard boiled eggs, peeled
- 1/2 cup fresh spinach, finely chopped
- 1/4 cup mayonnaise
- Salt and pepper to taste
- 12 slices cooked ham, cut into squares
- 1 box fish shaped crackers
- Red and blue food coloring
- Cream cheese
- 1 cantaloupe
- 1 container blueberries
- 1 pineapple
Instructions
- Slice the hard boiled eggs in half lengthwise. Carefully remove the egg yolks and place them in a bowl.
- Add the chopped spinach, mayonnaise, salt, and pepper to the bowl with the yolks. Mix well until smooth and creamy.
- Spoon the spinach yolk mixture back into the hollowed egg whites.
- Fold the ham slices onto a skewer.
- Gently place the halves of eggs onto each skewer.
