- 6 slices bread (challah or brioche), cut into 1-inch cubes
- 4 large eggs
- 1 cup milk
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- 1/4 cup granulated sugar (for topping)
- 2 tablespoons ground cinnamon (for topping)
- 4 tablespoons melted butter (for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
- In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, nutmeg, and salt.
- Add bread cubes and toss gently to coat. Let sit for 5 minutes.
- Combine sugar and cinnamon for the topping in a small bowl.
- Spoon bread mixture into muffin tin, filling cups almost to the top.
- Brush tops of muffins with melted butter.
- Sprinkle cinnamon sugar mixture generously over the buttered tops.
- Bake for 20-25 minutes, or until golden brown and set.
- Let cool in tin for a few minutes before transferring to a wire rack to cool completely.
