  • 6 slices bread (challah or brioche), cut into 1-inch cubes
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/4 cup granulated sugar (for topping)
  • 2 tablespoons ground cinnamon (for topping)
  • 4 tablespoons melted butter (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, nutmeg, and salt.
  3. Add bread cubes and toss gently to coat. Let sit for 5 minutes.
  4. Combine sugar and cinnamon for the topping in a small bowl.
  5. Spoon bread mixture into muffin tin, filling cups almost to the top.
  6. Brush tops of muffins with melted butter.
  7. Sprinkle cinnamon sugar mixture generously over the buttered tops.
  8. Bake for 20-25 minutes, or until golden brown and set.
  9. Let cool in tin for a few minutes before transferring to a wire rack to cool completely.
