- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
- For the Berry Layer:
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- For the Crumb Layer:
- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
- 2 tablespoons granulated sugar
Instructions
- Prepare the Crumb Layer: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well until the crumbs are evenly moistened.
- Make the Berry Layer: In a separate bowl, gently mash the mixed berries with sugar and lemon juice. Let it sit for 10 minutes to allow the berries to release their juices. Taste and add more sugar if needed.
- Whip the Cheesecake Layer: In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add vanilla extract and heavy cream, and continue to beat until light and fluffy. Be careful not to overbeat.
- Assemble the Shooter Desserts: Begin with making the first layer with the graham cracker crumb mixture at the bottom of each mini glass or shooter. Press down gently to create a firm base.
- Carefully Spoon the Berry Layer: Spoon a layer of the mashed berry mixture.
- Top with Cheesecake Layer: Gently spoon the cheesecake mixture on top of the berry layer.
- Garnish and Chill: Top with a few fresh berries and chill in the refrigerator for at least 30 minutes before serving.
