Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound pasta (fettuccine, spaghetti, or penne)
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup pasta water
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. In a skillet, heat olive oil over medium-high heat. Add the chicken, garlic powder, salt, and pepper. Cook until the chicken is cooked through and lightly browned, about 5-7 minutes. Set aside.
  2. Cook the pasta according to package directions until al dente. Reserve about 1/4 cup of pasta water before draining.
  3. While the pasta is cooking, melt butter in the same skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute, being careful not to burn it.
  4. Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in the Parmesan cheese until melted and smooth.
  5. Add the cooked chicken and drained pasta to the sauce. Toss to coat everything evenly. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  6. Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.
