- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound pasta (fettuccine, spaghetti, or penne)
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese, plus more for serving
- 1/4 cup pasta water
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- In a skillet, heat olive oil over medium-high heat. Add the chicken, garlic powder, salt, and pepper. Cook until the chicken is cooked through and lightly browned, about 5-7 minutes. Set aside.
- Cook the pasta according to package directions until al dente. Reserve about 1/4 cup of pasta water before draining.
- While the pasta is cooking, melt butter in the same skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute, being careful not to burn it.
- Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in the Parmesan cheese until melted and smooth.
- Add the cooked chicken and drained pasta to the sauce. Toss to coat everything evenly. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.
