Description

A classic creamy macaroni salad that’s easy to make and perfect for potlucks, picnics, and barbecues.


Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • ½ cup sweet pickle relish
  • 2 tablespoons yellow mustard
  • 2 tablespoons white vinegar
  • 2 tablespoons granulated sugar
  • ½ cup finely chopped celery
  • ¼ cup finely chopped red onion
  • 2 hard boiled eggs peeled and chopped
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • ½ teaspoon celery seed

Instructions

  1. Cook the macaroni according to package directions until al dente. Drain well and rinse with cold water.
  2. In a large bowl whisk together the mayonnaise sweet pickle relish yellow mustard white vinegar granulated sugar celery seed salt and pepper until smooth.
  3. Add the cooked macaroni chopped celery chopped red onion and chopped hard boiled eggs to the bowl with the dressing. Gently fold everything together.
  4. Cover the bowl and refrigerate for at least 2 hours before serving.
  5. Before serving give the salad a good stir and add a little extra mayonnaise if it seems dry. Garnish with a sprinkle of paprika if desired.
