A classic creamy macaroni salad that’s easy to make and perfect for potlucks, picnics, and barbecues.

- 1 pound elbow macaroni
- 1 cup mayonnaise
- ½ cup sweet pickle relish
- 2 tablespoons yellow mustard
- 2 tablespoons white vinegar
- 2 tablespoons granulated sugar
- ½ cup finely chopped celery
- ¼ cup finely chopped red onion
- 2 hard boiled eggs peeled and chopped
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
- ½ teaspoon celery seed
Instructions
- Cook the macaroni according to package directions until al dente. Drain well and rinse with cold water.
- In a large bowl whisk together the mayonnaise sweet pickle relish yellow mustard white vinegar granulated sugar celery seed salt and pepper until smooth.
- Add the cooked macaroni chopped celery chopped red onion and chopped hard boiled eggs to the bowl with the dressing. Gently fold everything together.
- Cover the bowl and refrigerate for at least 2 hours before serving.
- Before serving give the salad a good stir and add a little extra mayonnaise if it seems dry. Garnish with a sprinkle of paprika if desired.
