- For the Cream Cheese Frosting:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
Instructions
- 1. Prepare the Dough: In a large bowl, combine the flour, sugar, yeast, and salt.
- 2. In a separate bowl, whisk together the warm milk, melted butter, and egg.
- 3. Pour the wet ingredients into the dry ingredients and mix until a shaggy dough forms.
- 4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
- 5. Place the dough in a greased bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- 6. Make the Strawberry Filling: While the dough is rising, prepare the strawberry filling.
- 7. In a medium saucepan, combine the diced strawberries, sugar, and cornstarch.
- 8. Cook over medium heat, stirring constantly, until the strawberries release their juices and the mixture thickens, about 5-7 minutes.
- 9. Remove from heat and let cool slightly.
- 10. Assemble the Cinnamon Rolls: Once the dough has doubled, punch it down and turn it out onto a lightly floured surface.
- 11. Roll the dough into a 12×18 inch rectangle.
- 12. Spread the softened butter evenly over the dough.
- 13. Sprinkle the cinnamon evenly over the butter, then spread the strawberry filling evenly over the cinnamon.
- 14. Starting from the long edge, tightly roll the dough into a log.
- 15. Slice the log into 12 equal rolls.
- 16. Place the rolls in a greased 9×13 inch baking dish.
- 17. Cover with plastic wrap and let rise in a warm place for 30 minutes.
- 18. Bake the Cinnamon Rolls: Preheat oven to 350°F (175°C).
- 19. Bake for 20-25 minutes, or until golden brown.
- 20. Prepare the Cream Cheese Frosting: While the cinnamon rolls are baking, prepare the frosting.
- 21. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
- 22. Gradually add the powdered sugar, beating until smooth.
- 23. Add the milk and vanilla extract and beat until light and fluffy.
- 24. Frost the Cinnamon Rolls: Once the cinnamon rolls are out of the oven and still warm, spread the cream cheese frosting evenly over the top. Serve immediately.
