- 1 pound pasta (rotini, penne, or farfalle)
- 1 large head broccoli, cut into small florets
- 1/2 cup red onion, finely chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup sunflower seeds
- 1/2 cup crumbled cooked bacon (optional)
- 1 cup mayonnaise
- 1/4 cup apple cider vinegar
- 2 tablespoons sugar (or honey)
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- Prepare broccoli by washing and cutting into small florets.
- In a large bowl, combine cooled pasta, broccoli, red onion, cheddar cheese, sunflower seeds, and bacon (if using).
- In a separate small bowl, whisk together mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta mixture and gently toss to coat.
- Cover and refrigerate for at least 30 minutes (or overnight) to allow flavors to meld.
