  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sunflower seeds
  • 1/2 cup crumbled cooked bacon (optional)
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons sugar (or honey)
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. Prepare broccoli by washing and cutting into small florets.
  3. In a large bowl, combine cooled pasta, broccoli, red onion, cheddar cheese, sunflower seeds, and bacon (if using).
  4. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and pepper.
  5. Pour the dressing over the pasta mixture and gently toss to coat.
  6. Cover and refrigerate for at least 30 minutes (or overnight) to allow flavors to meld.
