- 1/2 cup red bell pepper, finely diced
- 2 hard boiled eggs, chopped

Instructions
- 1. Cook the macaroni: Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions until al dente.
- 2. Drain and Rinse: Drain the macaroni and rinse it with cold water to stop the cooking process.
- 3. Prepare the Dressing: In a large bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
- 4. Add the Vegetables: Add the chopped celery, red onion, and red bell pepper to the dressing. Stir to combine.
- 5. Combine Everything: Gently fold in the cooked macaroni and chopped hard boiled eggs. Make sure everything is evenly coated with the dressing.
- 6. Chill: Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld together.
