Instructions
- Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions until al dente. Drain and rinse with cold water.nIn a large bowl, whisk together the mayonnaise, sour cream, yellow mustard, apple cider vinegar, sugar, salt, and pepper until smooth.nAdd the cooked macaroni, celery, red onion, green bell pepper, hard boiled eggs, and sweet pickle relish to the bowl with the dressing.nGently toss all the ingredients together until everything is evenly coated with the dressing.nCover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld together.nBefore serving, give the salad a good stir. Garnish with fresh parsley and serve chilled.
