Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped red onion
  • 1/4 cup finely chopped bell pepper (I prefer red)
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook macaroni according to package directions until al dente. Drain and rinse with cold water.
  2. In a large bowl, whisk together mayonnaise, mustard, apple cider vinegar, sugar, celery seed, salt, and pepper.
  3. Add cooked macaroni, celery, red onion, and bell pepper to the bowl with the dressing.
  4. Gently toss until everything is evenly coated.
  5. Stir in the chopped fresh parsley.
  6. Cover and refrigerate for at least 2 hours to allow flavors to meld.
  7. Toss again before serving and adjust seasoning if needed.
