- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1/4 cup yellow mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon celery seed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped red onion
- 1/4 cup finely chopped bell pepper (I prefer red)
- 1/4 cup chopped fresh parsley
Instructions
- Cook macaroni according to package directions until al dente. Drain and rinse with cold water.
- In a large bowl, whisk together mayonnaise, mustard, apple cider vinegar, sugar, celery seed, salt, and pepper.
- Add cooked macaroni, celery, red onion, and bell pepper to the bowl with the dressing.
- Gently toss until everything is evenly coated.
- Stir in the chopped fresh parsley.
- Cover and refrigerate for at least 2 hours to allow flavors to meld.
- Toss again before serving and adjust seasoning if needed.
