Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh parsley
  • 2 hard boiled eggs, diced

Instructions

  1. Cook macaroni according to package directions until al dente. Drain and rinse with cold water.
  2. In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, honey, salt, and pepper.
  3. Add cooled macaroni, celery, red onion, red bell pepper, parsley, and hard boiled eggs to the bowl with the dressing.
  4. Gently fold all ingredients together until evenly coated.
  5. Cover and refrigerate for at least 1 hour before serving.
