- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced celery
- 1/2 cup diced red onion
- 1/2 cup diced red bell pepper
- 1/4 cup chopped fresh parsley
- 2 hard boiled eggs, diced
Instructions
- Cook macaroni according to package directions until al dente. Drain and rinse with cold water.
- In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, honey, salt, and pepper.
- Add cooled macaroni, celery, red onion, red bell pepper, parsley, and hard boiled eggs to the bowl with the dressing.
- Gently fold all ingredients together until evenly coated.
- Cover and refrigerate for at least 1 hour before serving.
