  • For the Crust:
  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Filling:
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12 cup muffin tin with paper liners.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of each liner.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and sour cream. Mix well.
  4. Add eggs one at a time, mixing on low speed until just combined.
  5. Pour filling evenly over crusts.
  6. Bake for 18-20 minutes, or until edges are set and center is slightly jiggly.
  7. Turn off oven and crack door slightly. Let cool in oven for 30 minutes.
  8. Remove from oven and cool completely at room temperature. Refrigerate for at least 2 hours before serving. Garnish and enjoy!
