- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 5 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- For the Filling:
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup sour cream
Instructions
- Preheat oven to 350°F (175°C). Line a 12 cup muffin tin with paper liners.
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of each liner.
- In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and sour cream. Mix well.
- Add eggs one at a time, mixing on low speed until just combined.
- Pour filling evenly over crusts.
- Bake for 18-20 minutes, or until edges are set and center is slightly jiggly.
- Turn off oven and crack door slightly. Let cool in oven for 30 minutes.
- Remove from oven and cool completely at room temperature. Refrigerate for at least 2 hours before serving. Garnish and enjoy!
