Ingredients

  • 2 1/2 cups all purpose flour
  • 1 1/2 cups granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • Food coloring (optional)
  • Decoration:
  • Sprinkles
  • Fondant or gum paste for graduation caps (optional)
  • Edible glitter (optional)

Instructions

  1. 1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch pan or line a cupcake tin.
  2. 2. Whisk together flour, sugar, baking powder, and salt.
  3. 3. Add butter and milk; beat until combined.
  4. 4. Add eggs one at a time, then stir vanilla.
  5. 5. Pour batter into prepared pan or fill cupcake liners 2/3 full.
  6. 6. Bake 30 35 minutes for cake, 18 20 minutes for cupcakes, until a skewer comes out clean.
  7. 7. Cool in pan/tin for 10 minutes, then transfer to a wire rack to cool completely.
  8. 8. Prepare frosting: Beat softened butter until fluffy.
  9. 9. Gradually add powdered sugar cup at a time, beating well.
  10. 10. Add milk and vanilla extract; beat until smooth. Add food coloring if desired.
  11. 11. Once cake or cupcakes are cool, frost.
  12. 12. Decorate with sprinkles, fondant caps, or glitter.
