- For the Cake:
- 2 ½ cups all purpose flour
- 1 ½ cups granulated sugar
- 3 ½ teaspoons baking powder
- 1 teaspoon salt
- ¾ cup unsalted butter, softened
- 1 ¼ cups milk
- 2 large eggs
- 1 teaspoon vanilla extract
- For the Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- ½ cup milk
- 2 teaspoons vanilla extract
- Food coloring (optional, for decorating)
- For Decoration:
- Graduation themed sprinkles
- Miniature graduation caps (available at craft stores)
- Edible glitter (optional)
Instructions
- 1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- 3. Add the softened butter and milk to the dry ingredients. Beat with an electric mixer on low speed until just combined.
- 4. Increase the mixer speed to medium and beat for 2 minutes, scraping down the sides of the bowl as needed.
- 5. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- 6. Pour the batter evenly into the prepared cake pans.
- 7. Bake for 30 35 minutes, or until a wooden skewer inserted into the center comes out clean.
- 8. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- 9. While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
- 10. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- 11. Add the milk and vanilla extract to the frosting mixture and beat until smooth and creamy. If desired, add food coloring to achieve your desired shade.
- 12. Once the cakes are completely cool, level the tops if necessary. Place one cake layer on a serving plate or cake stand.
- 13. Spread a generous layer of frosting over the first cake layer.
- 14. Carefully place the second cake layer on top of the frosting.
- 15. Frost the entire cake with the remaining frosting.
- 16. Decorate the cake with graduation themed sprinkles, miniature graduation caps, and edible glitter.
