Ingredients

  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • Gel food coloring (in school colors)
  • Sprinkles (Optional)
  • Edible glitter (Optional)
  • Mini graduation caps (Optional)
  • Edible markers (Optional)
  • Candies (Optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a mini muffin tin.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Fill each mini muffin cup about two thirds full.
  7. Bake for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the mini cakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  9. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the milk, until the frosting is smooth and fluffy. Stir in the vanilla extract.
  10. Divide the frosting into separate bowls and tint each bowl with your desired gel food coloring.
  11. Once the mini cakes are completely cool, frost them with your colored frosting. Add sprinkles, edible glitter, mini graduation caps, or edible markers to personalize each cake.
