  • 3 tablespoons meringue powder
  • 68 tablespoons warm water
  • Gel food coloring (various colors)

Instructions

  1. 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. 2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. 3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. 4. Beat in eggs one at a time, then stir in vanilla extract.
  5. 5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. 6. Divide dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
  7. 7. On a lightly floured surface, roll out one disc of dough to about 1/4 inch thickness.
  8. 8. Use cookie cutters to cut out shapes.
  9. 9. Place cut out cookies onto prepared baking sheets, leaving space between each cookie.
  10. 10. Bake for 8-10 minutes, or until edges are lightly golden.
  11. 11. Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  12. 12. In a large bowl, whisk together powdered sugar and meringue powder.
  13. 13. Gradually add warm water, starting with 6 tablespoons, and beat with an electric mixer until smooth and forms stiff peaks. Add more water, a teaspoon at a time, if needed.
  14. 14. Divide icing into separate bowls and tint with gel food coloring to create desired colors.
  15. 15. Transfer icing to piping bags fitted with small round tips.
