- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 3 tablespoons meringue powder
- 6–8 tablespoons warm water
- Gel food coloring (various colors)
Instructions
- 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- 2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- 3. In a large bowl, cream together butter and sugar until light and fluffy.
- 4. Beat in eggs one at a time, then stir in vanilla extract.
- 5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
- 6. Divide dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
- 7. On a lightly floured surface, roll out one disc of dough to about 1/4 inch thickness.
- 8. Use cookie cutters to cut out shapes.
- 9. Place cut out cookies onto prepared baking sheets, leaving space between each cookie.
- 10. Bake for 8-10 minutes, or until edges are lightly golden.
- 11. Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- 12. In a large bowl, whisk together powdered sugar and meringue powder.
- 13. Gradually add warm water, starting with 6 tablespoons, and beat with an electric mixer until smooth and forms stiff peaks. Add more water, a teaspoon at a time, if needed.
- 14. Divide icing into separate bowls and tint with gel food coloring to create desired colors.
- 15. Transfer icing to piping bags fitted with small round tips.
- 16. Decorate cooled cookies with royal icing.
- 17. Allow icing to dry completely before stacking or serving.
