- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- ½ cup ranch dressing
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- 1. In a large bowl, whisk together the ranch dressing, minced garlic, parmesan cheese, olive oil, lemon juice, dried parsley, salt, and black pepper.
- 2. Add the chicken cubes to the bowl and toss to coat evenly.
- 3. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
- 4. Preheat grill to medium heat (350°F).
- 5. Thread chicken onto skewers.
- 6. Grill for 10-12 minutes, turning occasionally, until chicken is cooked through (165°F).
- 7. Remove from grill and let rest for a minute or two before serving.
