Ingredients

  • 2 pounds beef chuck, cut into 1 inch cubes
  • 4 tablespoons butter, unsalted
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef cubes generously with salt and freshly ground black pepper.
  2. In a large skillet over medium high heat, melt 2 tablespoons of butter. Sear the beef in batches until browned on all sides.
  3. Transfer the seared beef to your slow cooker.
  4. In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic, dried thyme, dried rosemary, and red pepper flakes (if using). Cook for about 1 minute, until fragrant.
  5. Pour in the beef broth, Worcestershire sauce, and soy sauce. Stir to combine, scraping up any browned bits from the bottom of the skillet.
  6. Pour the garlic butter sauce over the beef in the slow cooker.
  7. Cover and cook on low for 6 8 hours, or on high for 3 4 hours, or until the beef is very tender.
  8. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  9. Stir the cornstarch slurry into the slow cooker. Cover and cook for another 15 20 minutes, or until the sauce has thickened.
  10. Garnish with fresh parsley and serve hot
