Ingredients
Scale
- 2 pounds beef chuck, cut into 1 inch cubes
- 4 tablespoons butter, unsalted
- 6 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the beef cubes generously with salt and freshly ground black pepper.
- In a large skillet over medium high heat, melt 2 tablespoons of butter. Sear the beef in batches until browned on all sides.
- Transfer the seared beef to your slow cooker.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic, dried thyme, dried rosemary, and red pepper flakes (if using). Cook for about 1 minute, until fragrant.
- Pour in the beef broth, Worcestershire sauce, and soy sauce. Stir to combine, scraping up any browned bits from the bottom of the skillet.
- Pour the garlic butter sauce over the beef in the slow cooker.
- Cover and cook on low for 6 8 hours, or on high for 3 4 hours, or until the beef is very tender.
- In a small bowl, whisk together the cornstarch and cold water to create a slurry.
- Stir the cornstarch slurry into the slow cooker. Cover and cook for another 15 20 minutes, or until the sauce has thickened.
- Garnish with fresh parsley and serve hot
