Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon all purpose flour
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 (14.9 oz) can Guinness stout
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 lb russet potatoes, peeled and cubed
  • 1 cup frozen peas (optional, for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1. In a large Dutch oven or pot, heat olive oil over medium-high heat. Season beef cubes with salt, pepper, and flour. Sear the beef in batches until browned on all sides. Remove from pot and set aside.
  2. 2. Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
  3. 3. Pour in Guinness stout and scrape up any browned bits from the bottom of the pot.
  4. 4. Return the beef to the pot. Add beef broth, tomato paste, thyme, rosemary, and bay leaf. Bring to a simmer, then reduce heat to low, cover, and cook for at least 2 hours, or until beef is very tender.
  5. 5. Add cubed potatoes and cook for another 30-45 minutes, or until potatoes are tender.
  6. 6. Stir in frozen peas (if using) during the last few minutes of cooking. Remove bay leaf before serving. Garnish with fresh parsley and enjoy!
