Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tbsp all-purpose flour
  • 1 (14.9 oz) can Guinness stout
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 lb potatoes, peeled and cubed
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Season beef cubes with salt and pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat. Brown the beef in batches and set aside.
  3. Add onion, carrots, and celery to pot; cook until softened (5-7 min). Add garlic and cook for 1 minute.
  4. Stir in tomato paste and flour; cook for 1-2 minutes.
  5. Pour in Guinness and scrape up browned bits. Simmer for a few minutes.
  6. Add beef broth, bay leaves, thyme, and rosemary. Bring to a boil, then reduce heat and return beef to pot.
  7. Cover and simmer for 2-3 hours, or until beef is tender.
  8. Add potatoes and cook for 30-45 minutes, until potatoes are tender.
  9. Stir in peas during the last 5 minutes of cooking.
  10. Season to taste. Remove bay leaves before serving.
