- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tbsp all-purpose flour
- 1 (14.9 oz) can Guinness stout
- 4 cups beef broth
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 lb potatoes, peeled and cubed
- 1 cup frozen peas
- Salt and pepper to taste
Instructions
- Season beef cubes with salt and pepper.
- Heat olive oil in a Dutch oven over medium-high heat. Brown the beef in batches and set aside.
- Add onion, carrots, and celery to pot; cook until softened (5-7 min). Add garlic and cook for 1 minute.
- Stir in tomato paste and flour; cook for 1-2 minutes.
- Pour in Guinness and scrape up browned bits. Simmer for a few minutes.
- Add beef broth, bay leaves, thyme, and rosemary. Bring to a boil, then reduce heat and return beef to pot.
- Cover and simmer for 2-3 hours, or until beef is tender.
- Add potatoes and cook for 30-45 minutes, until potatoes are tender.
- Stir in peas during the last 5 minutes of cooking.
- Season to taste. Remove bay leaves before serving.
