Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 cup all purpose flour
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 8 ounces semi sweet chocolate, chopped
  • ½ cup heavy cream
  • 1/4 teaspoon peppermint extract
  • ½ cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup heavy cream
  • ½ teaspoon peppermint extract
  • Few drops green food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch pan.
  2. Whisk melted butter and sugar. Add eggs, vanilla, and peppermint extract.
  3. Combine flour, cocoa, baking powder, and salt.
  4. Gradually add dry to wet ingredients, mix until combined.
  5. Pour batter into pan and bake for 2530 minutes.
  6. Let cool completely.
  7. Make ganache: Pour hot cream over chocolate, let sit, then stir until smooth. Add peppermint extract.
  8. Pour ganache over cooled brownies and chill.
  9. Make frosting: Beat butter, add powdered sugar, cream, peppermint extract, and food coloring.
  10. Spread frosting over ganache and cut into squares.
