This Italian Grinder Pasta Salad combines classic deli flavors with fresh veggies and pasta in a creamy, tangy dressing for a perfect potluck dish.

- 1 pound rotini pastan1/2 cup mayonnaisen1/4 cup red wine vinegarn2 tablespoons olive oiln2 cloves garlic, mincedn1 teaspoon dried oreganon1/2 teaspoon red pepper flakesn1 teaspoon saltn1/2 teaspoon black peppern4 ounces salami, thinly sliced and choppedn4 ounces provolone cheese, cubedn4 ounces ham, thinly sliced and choppedn4 ounces pepperoni, thinly slicedn1/2 cup banana peppers, slicedn1/4 cup red onion, thinly slicedn1 cup cherry tomatoes, halvedn2 cups iceberg lettuce, shreddedn1/4 cup Parmesan cheese, grated (Optional)
Instructions
- Cook pasta according to package directions until al dente. Drain and rinse with cold water.nIn a large bowl, whisk together mayonnaise, red wine vinegar, olive oil, garlic, oregano, red pepper flakes, salt, and pepper.nAdd cooked pasta, salami, provolone, ham, pepperoni, banana peppers, red onion, and cherry tomatoes to the bowl with the dressing and toss well.nGently fold in the shredded iceberg lettuce.nCover and refrigerate for at least 30 minutes to allow flavors to meld.nBefore serving, toss again and garnish with Parmesan cheese, if desired. Serve chilled.
