Ingredients

  • 1 pound pasta (rotini, penne, or your favorite shape)
  • 4 ounces salami, thinly sliced and chopped
  • 4 ounces pepperoni, thinly sliced and chopped
  • 4 ounces ham, thinly sliced and chopped
  • 4 ounces provolone cheese, cubed
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup banana peppers, sliced
  • 1/4 cup Kalamata olives, halved
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain well and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, salami, pepperoni, ham, provolone cheese, red onion, banana peppers, Kalamata olives, cherry tomatoes, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, oregano, and red pepper flakes (if using). Season with salt and pepper to taste.
  4. Pour the dressing over the pasta mixture and toss well to combine.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Before serving, give the salad another toss and add any extra parsley or banana peppers for garnish.
