A vibrant pasta salad bursting with Italian grinder flavors, perfect for a quick dinner or potluck. Combines pasta, deli meats, cheese, veggies, and a zesty dressing.

- 1 pound pasta (rotini, penne, or your favorite shape)
- 4 ounces salami, thinly sliced and chopped
- 4 ounces pepperoni, thinly sliced and chopped
- 4 ounces ham, thinly sliced and chopped
- 4 ounces provolone cheese, cubed
- 1/2 cup red onion, thinly sliced
- 1/2 cup banana peppers, sliced
- 1/4 cup Kalamata olives, halved
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Cook the pasta according to package directions until al dente. Drain well and rinse with cold water.
- In a large bowl, combine the cooked pasta, salami, pepperoni, ham, provolone cheese, red onion, banana peppers, Kalamata olives, cherry tomatoes, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, oregano, and red pepper flakes (if using). Season with salt and pepper to taste.
- Pour the dressing over the pasta mixture and toss well to combine.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Before serving, give the salad another toss and add any extra parsley or banana peppers for garnish.
