- 1 pound rotini pasta
- 1 pint cherry tomatoes, halved
- 1 cucumber, peeled, seeded, and diced
- 1/2 red onion, thinly sliced
- 1 bell pepper, diced
- 1/2 cup black olives, sliced
- 4 ounces pepperoni, sliced or cubed
- 4 ounces salami, sliced or cubed
- 8 ounces mozzarella cheese, cubed
- 1/4 cup fresh parsley, chopped
- 1 cup Italian dressing
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- 1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water.
- 2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, bell pepper, black olives, pepperoni, salami, and mozzarella cheese.
- 3. In a small bowl, whisk together the Italian dressing, red wine vinegar, olive oil, garlic powder, dried oregano, salt, and pepper.
- 4. Pour the dressing over the pasta mixture and toss gently to coat everything evenly.
- 5. Stir in the chopped fresh parsley.
- 6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- 7. Before serving, toss and add more dressing if needed.
