  • 1 pound rotini pasta
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, peeled, seeded, and diced
  • 1/2 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/2 cup black olives, sliced
  • 4 ounces pepperoni, sliced or cubed
  • 4 ounces salami, sliced or cubed
  • 8 ounces mozzarella cheese, cubed
  • 1/4 cup fresh parsley, chopped
  • 1 cup Italian dressing
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. 1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water.
  2. 2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, bell pepper, black olives, pepperoni, salami, and mozzarella cheese.
  3. 3. In a small bowl, whisk together the Italian dressing, red wine vinegar, olive oil, garlic powder, dried oregano, salt, and pepper.
  4. 4. Pour the dressing over the pasta mixture and toss gently to coat everything evenly.
