Description

A flavorful and easy to make Italian Pasta Salad with rotini pasta, fresh vegetables, mozzarella and a tangy homemade dressing. Perfect for potlucks, lunches, or a quick dinner.


Ingredients

  • 1 pound rotini pasta
  • 1 pint cherry tomatoes, halved
  • 1 medium cucumber, peeled, seeded, and diced
  • 1 red bell pepper, diced
  • 1 can (6 ounces) black olives, sliced
  • 1/4 cup red onion, finely chopped
  • 8 ounces fresh mozzarella balls (bocconcini), halved or quartered
  • 4 ounces salami or pepperoni, sliced and quartered (optional)
  • 1/4 cup grated Parmesan cheese (for garnish)
  • For the Dressing:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 2 teaspoons dried Italian herb mix
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  1. 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process.
  2. 2. Prepare the Vegetables: While the pasta is cooking, dice the cucumber and bell pepper. Halve the cherry tomatoes and slice the black olives. Finely chop the red onion.
  3. 3. Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Italian herb mix, Dijon mustard, sugar, salt, and pepper. Taste and adjust seasonings as needed.
  4. 4. Combine Ingredients: In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, black olives, red onion, mozzarella balls, and salami (if using).
  5. 5. Add Dressing: Pour the dressing over the pasta mixture and toss gently to coat all ingredients evenly.
  6. 6. Chill: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. For optimal flavor, chill for at least 2 hours or overnight.
  7. 7. Serve: Before serving, toss the salad again. Garnish with grated Parmesan cheese just before serving.
