A flavorful and easy to make Italian Pasta Salad with rotini pasta, fresh vegetables, mozzarella and a tangy homemade dressing. Perfect for potlucks, lunches, or a quick dinner.

- 1 pound rotini pasta
- 1 pint cherry tomatoes, halved
- 1 medium cucumber, peeled, seeded, and diced
- 1 red bell pepper, diced
- 1 can (6 ounces) black olives, sliced
- 1/4 cup red onion, finely chopped
- 8 ounces fresh mozzarella balls (bocconcini), halved or quartered
- 4 ounces salami or pepperoni, sliced and quartered (optional)
- 1/4 cup grated Parmesan cheese (for garnish)
- For the Dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 2 teaspoons dried Italian herb mix
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process.
- 2. Prepare the Vegetables: While the pasta is cooking, dice the cucumber and bell pepper. Halve the cherry tomatoes and slice the black olives. Finely chop the red onion.
- 3. Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Italian herb mix, Dijon mustard, sugar, salt, and pepper. Taste and adjust seasonings as needed.
- 4. Combine Ingredients: In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, black olives, red onion, mozzarella balls, and salami (if using).
- 5. Add Dressing: Pour the dressing over the pasta mixture and toss gently to coat all ingredients evenly.
- 6. Chill: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. For optimal flavor, chill for at least 2 hours or overnight.
- 7. Serve: Before serving, toss the salad again. Garnish with grated Parmesan cheese just before serving.
