- 1 cup (240g) active sourdough starter, fed and bubbly
- 1 1/2 cups (360ml) milk (dairy or non dairy)
- 2 large eggs
- 2 tablespoons melted butter, plus more for greasing
- 1/4 cup (50g) granulated sugar
- 1 teaspoon vanilla extract
- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- In a large bowl, whisk together the sourdough starter, milk, eggs, melted butter, sugar, and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gently fold the dry ingredients into the wet ingredients until just combined.
- Cover the bowl and let the batter rest for 15-20 minutes.
- Heat a lightly greased griddle or frying pan over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve with your favorite toppings.
